Walk into any one of Atlanta’s family-run taquerias or Mexican markets with a counter-service taqueria in the back, and the menu likely lists a traditional “weekend-only” soup called menudo. Made from beef tripe (cow stomach) and hominy (made from whole kernels of corn), the slow-cooked broth is seasoned with red chile peppers (to which it owes its brilliant hue), oregano, and garlic. Brito Supermarket’s taqueria moved to a new location recently and renamed itself El Jefe Taqueria. However, the food remains the same here with a variety of tacos on its menu, including al pastor and carne asada. Head in on Sundays for menudo. The soup contains a mix of large chunks of tripe and slivers of honeycomb tripe, with hominy swimming in a slightly pungent chile broth. Menudo is served with a basket of crusty bread, similar to a small French baguette.

While better known for its heaping platters of pollo asado (roast chicken), this family-owned restaurant featuring food from the Sinaloa region of Mexico also serves menudo on Saturdays and Sundays. The rich and fragrant stew-like broth is seasoned with oregano and bay leaves and contains generous amounts of hominy, spongy honeycomb, and chunky tripe. Look for Sinaloense Pollo Asados’s bright yellow signage next to Mozart Bakery on Buford Highway.
