Tour Roebuck, Lakeview’s New Pizzeria and Brewpub With Fancy Drinks

The owners of DryHop fuse Italian pies, fresh beer, and craft cocktails

Roebuck Pizza, the new brewpub in Lakeview with thin-crust pizzas and fancy cocktails, should open right after Labor Day at 3159 N. Broadway. It’s Lakeview’s fourth brewery and second on Broadway. Roebuck’s owner also owns the popular DryHop Brewers, conveniently located next door to the pizzeria.

The crusts are Neapolitan-influenced, as owner Greg Shuff journeyed to Italy to learn about the pizza style. He described Roebuck’s pizzas as “neo-Neopolitan” with a chewier crust. Beyond that the pizzas have more of a European influence with varieties including the “Standard Bearer” (red sauce, mozzarella, basil, hot soppressata, pickled jalapeno, honey) and “Little Green Men” (cream, mozzarella, pistachio pesto, mortadella, crushed pistachio, lemon zest).

While it would be easy to rely on pizza and beer, Shuff wanted Roebuck to differ. He brought in Chicago bar veterans who have worked at acclaimed places including iconic Wicker Park cocktail bar Violet Hour to make the drinks at Roebuck. The opening drink list includes “Sunburn in the Woods” (vodka, chareau aloe liquor, rinomato, fino sherry, lemon, mint). Staff will also pour four beers brewed on premises that focus on lagers.

Virtually walk through the space in the photos below. The Dryhop team transformed a former parking garage into a comfy space for friends to gather. Shuff, who also owns Corridor Brewery & Provisions on Southport, has plans to open as many as 40 brewpubs. His next project, Crushed by Giants, is coming to the second-floor Michigan Avenue space that housed Heaven on Seven.
