Portland’s Pizzeria With Mexican Toppings Opened Yesterday in Portland

Zapapizza has started serving thick-crusted pies topped with queso fresco and salchichas

Portland’s assortment of pizza shops has gotten even more eclectic: Zapapizza, the new thick-crust pizzeria from Mi Mero Mole owner Nick Zukin, is incorporating some of the spirit of his other restaurant, serving pizzas topped with Mexican ingredients alongside the usual pepperoni and basil.

The pizza shop opened yesterday with a limited menu, including slices, drinks, and hot wings perked up with Valentina. The pizza menu includes the standard staples — cheese, margherita, pepperoni — as well as slices like the “Zaparoni,” which combines pepperoni with pickled jalapenos, queso fresco, and avocado. His white pie uses a sour cream sauce with roasted green chiles and onion, and in place of a traditional sausage pie, Zapapizza’s salchichas uses Mexican beef franks, paired with fresh jalapeno.

The restaurant also has a full bar, with a limited number of simple drinks: whiskey gingers, aperol spritzes, Cuba Libres. The restaurant also offers a few wines and a number of beers on tap, including Modelo Especial. According to its Instagram, Zapapizza is open from 11 a.m. to 9 p.m. at 503 West Burnside.
