Meat Master Adam Perry Lang Is Opening a Steakhouse in Wine Country

The APL chef is plotting a new spot in Yountville

Literal barbecue hall-of-famer Adam Perry Lang is bringing his talents to Yountville with a new steakhouse called Perry Lang’s. It’s set to open by early October, according to a representative for the business. The location is a complex at the Groezinger Estate House, an historic 1870 winery that includes the Hotel Villagio. News of the forthcoming restaurant was first reported by the Chronicle.

After experience at fine dining temples like Le Cirque and Daniel in NY, Lang opened his first eponymous restaurant, Adam Perry Lang, in Los Angeles last year. At APL, Lang serves a menu focused on meat, like a 150-day dry-aged burger, smoked short ribs, and massive tomahawk chops.

Lang tells the Chronicle he was attracted to Yountville in part by chef Thomas Keller, mayor of the town, at least from a restaurant point of view, with businesses from the French Laundry to the new, casual La Calenda.

In Yountville, the new Perry Lang’s will fall somewhere in the middle, in terms of formality. Lang’s new business is taking over the two-story estate mansion at Groezinger. The space will include floor-to-ceiling windows for diners to peer into a dry-aging room. The menu is still being developed, and a Napa-heavy wine list (of course) is on the horizon.

Stay tuned for more details as Perry Lang’s approaches; Dry-aging has probably started.
