The Salty Tart Closes Minneapolis Shop, but the Saint Paul Cafe Carries On

Lauded pastry chef Michelle Gayer consolidates her businesses

It’s been eleven years of shiny domed milk buns, crackaroons, and enough buttercream to cover the K12, but yesterday was the end of Michelle Gayer’s Minneapolis era. Her beloved bakery, The Salty Tart has closed its Minneapolis location. The Saint Paul cafe and bakery in Lowertown’s Market House Collaborative will now be the only location.

Gayer had first moved to Minnesota to work in the commercial side of another bakery. The one time pastry chef for legendary chef Charlie Trotter dreamed of the chance to open her own sweet bakery, maybe something with a few savory options and Parisienne tables where guests could sip something bubbly.

The Salty Tart first opened as a stand inside Midtown Global Market. News of her phenomenal pastries soon spread and she quickly gathered a large, devoted following.

In 2017 she added a commercial bakery space at 2940 Harriet Avenue to accommodate business orders in the Lyn/Lake neighborhood. In the fall of 2018 she closed the Midtown Global location and added a retail counter to the second location. In 2018, she opened the cafe. Know for the same irresistible sweets the Salty Tart built a reputation upon, the bigger room also allowed for breakfast and lunch options, plus an top notch coffee program.

The Salty Tart also operates a small stand inside the Minneapolis/St. Paul International Airport selling croissant and macaroons to travelers.
