Located just south of Summerlin, the Fort Apache Center has three new tenants on the way and is actively searching to add more dining options next year.

Promised to be coming soon, the third local expansion for California-based Zero Degrees will fill 1,600 square feet, close to the intersection of Fort Apache and Spring Mountain Roads.

Planned to be ready before the end of December, the menu will include the brightly colored mangonadas, ube milkshakes, spicy Dole Whip, and hot Cheetos chilote.

Two doors down, Pancho’s Vegan Tacos has yet to update its progress, but also hopes to be ready by the end of the year. Taking over a substantial 3,518 square feet and expanding from the Henderson original, it will import a full menu of “100% vegan authentic Mexican food.”

And sitting in between both of them, The Buddhakai Group’s latest concept Cubanidad will fill its own 1,008-square-foot space. The same operators run Sekushi Japanese Restaurant at the Paris resort and were behind the shuttered F.A.M.E. at The Linq Promenade. The company also recently trademarked the name “China Cubano,” suggesting a possible menu twist on familiar Cuban dishes.

Yet to be announced, construction work on Cubanidad is expected to begin shortly.
