Expanding from their successful origins as a creator and distributor of vegan meat products to Las Vegas chefs, locals NoButcher have launched the first 100 percent plant-based version of a traditional deli.

Equipped with a drive-thru and indoor seating, the vegan-welcoming butcher shop replaced J.Gumbo’s Cajun Cookin’ and Beignets at the southwest’s Rainbow Springs Shopping Center, creating a counter-service destination for lunch and dinner.

Patrons can order vegan meat and cheese alternatives to go, or eat the house-created sandwiches, sides, and salads, available in combo deals.

Still looking to expand on the current menu, choices include a pulled NoPork sandwich with barbecue sauce and maple mustard coleslaw, the Aloha NoRib served on a ciabatta roll, Mediterranean roasted vegetables, and their version of an Italian cold cut sandwich prepared with NoTurkey and NoPepperoni.

NoTuna and NoEgg salad sandwiches can be upgraded with sides of potato, lentil salad, and NoButcher’s own rosemary-infused lemonade.

NoButcher, 3565 S. Rainbow Blvd., 702-268-7488. Open daily from 11 a.m. to 8 p.m.
