Inclusive bakery thrives in Lincoln

Angela Garbacz knew when she was just six years old that she wanted to someday open her own bakery. She just didn't know that she would end up revolutionizing inclusivity in the baking industry.

Angela graduated from Lincoln High School in 2005. She then attended UNL and pastry school in New York City, "I could have stayed, but I knew that I wanted to come back to Lincoln, finish my bachelors degree and start a business here."

Angela Started Goldenrod Pastries as a on-line blog in 2014, "I started the blog as a way to discover and learn how to make dairy-free pastries because I had been trained in classic French pastry, which uses a lot of butter and cream and so I started developing recipes and learning how to bake without those things."

Angela published her stories and original recipes on her blog, "Within a very short period of time, probably three or four weeks, people were contacting me and they wanted not only dairy-free, but they wanted gluten-free, vegan, Paleo, nut-free, all of these things that I didn't know how to make."

Angela opened her bakery across the street from Union College in 2015...exactly one year after her blog was started. Angela explains, "I opened Goldenrod with the intention of making it an inclusive environment for people to eat how they want or need to."
