Moldy pulled pork among violations found in restaurant inspections

Get details on restaurants cited by Maricopa County inspectors for four or more priority violations the week of May 27.

A priority violation is a major violation that directly contributes to increasing the risk of food-borne illness or injury. If listed in the reports, remedies implemented during inspections are included.

1. Mold on pulled pork and fruit salad stored in prep table. | Discarded.

1. Owner washed hands for less than 20 seconds then dried hands on a soiled cloth. | Rewashed hands.

3. No records from seafood vendor for raw fish and shrimp offered on menu. | Must provide prior to reinspection.
4. Owner prepped raw cucumber and limes on same cutting board used to prepare and cut raw fish. Raw shrimp, tilapia and mollusks stored above whole tomatoes, cucumbers, a container of mayonnaise and raw onions. | Items rearranged to prevent cross-contamination. Cucumber and limes discarded.
5. Not enough chlorine in three-compartment sink. | Remade.

1. Employee handled dirty equipment then put on gloves without washing hands. Employee handled dirty dishes and equipment, rinsed hands with water then proceeded to handle clean dishes. | Hands washed, changed gloves.
2. Staff touched ice with bare hands while placing glasses into large ice bin. Staff handled chopped cabbage used for salads with bare hands. | Ice removed from ice bin, food discarded.
3. Staff rinsed dirty containers and large metal bowls with water then stored away as clean. Staff rinsed knives in hand washing sink at sushi bar without proper wash, rinse and sanitization. | All equipment placed in dishwashing machine for proper cleaning.
4. Cooked noodles at improper temperatures. | Corrected.

1. Chicken soup improperly cooled. | Discarded.

3. Raw shelled eggs not kept cold enough. | Discarded.
4. Cooked chicken, jalapeños and tortilla dough stored in grocery bags. | Items removed from bags.

Hey Papirrin Mariscos y Tacos al Mesquite, mobile food unit, Buckeye.

1. Bags of raw shrimp stored over cooked octopus, diced onions and cooked shrimp in cooler. Raw chorizo stored over uncooked fries in fridge. | Rearranged to prevent cross-contamination.
2. Employee washed and rinsed several dishes without sanitizing. | Corrected.
3. Broth for shrimp cocktail not kept hot enough. | Reheated.
