Food News: Here's What to Know About Rosie Cannonball, Montrose Cheese & Wine

Plus, another tenant has opened at the food hall Understory.

We're ever so close to the opening of Goodnight Hospitality's Montrose trifecta of Rosie Cannonball, Montrose Cheese & Wine, and March (situated next to the well-established Goodnight Charlie's). To whet your whistle before the doors open, the team led by David Keck, Peter McCarthy, Felipe Riccio, and June Rodil have announced several impressive hirings for the concepts, along with more information about the first two to open: Rosie Cannonball and Montrose Cheese & Wine.

At Rosie Cannonball, which is scheduled for a summer opening, prepare for a mix of classic technical and modern European cuisine using locally sourced ingredients. The team includes chef de cuisine Adam Garcia (previously of The Pass and Provisions and Coltivare), service manager Rachael Pino (New York's Eleven Madison Park, Austin's McGuire Moorman Hospitality), and bar manager Stuart Humphries (Tongue-Cut Sparrow). Joining them is the new executive pastry chef of Goodnight Hospitality, Shawn Gawle, who's worked stints at L'Atelier de Joel Robuchon in New York, Lacroix at the Rittenhouse in Philadelphia, and three-Michelin-starred Quince in San Francisco. The group will use the bounty from Goodnight Hospitality's farm in Belville to help construct the restaurant's food and beverage menus.

As for Montrose Cheese & Wine, which is set to open this summer, the team includes wine director Ryan Cooper (Uchi, Camerata) and cheesemonger and general manager Shannon McCracken (Boomtown Coffee, Houston Dairymaids). The anticipation is the shop will have a wide range of bottles, focusing on varieties available at $40 or less.

March is still a bit in the distance ("a few months out," per a representative), and more information on that tasting-menu restaurant will come closer to its opening.

B.B. Lemon Montrose is now open for lunch and dinner. The second location of Berg Hospitality Group's New York-style restaurant launched service Monday, and on Sunday celebrated its infancy with a drag brunch. More than 70 people dined on miniature renditions of Lemon's brunch items while being entertained by DJ Ramalama and three drag queens: Blackberri, Barbara Coa, and Porter Bella Graves. Proceeds went to the Montrose Center, which helps empower LGBTQ individuals and their families.

Boomtown Coffee is now open at Understory, the new food hall at the Bank of America Tower with connections to the downtown tunnels. The third location of the popular coffee spot started up this week, and will be open 7 a.m. to 6 p.m. Monday-Friday. “We’re challenging ourselves to combine the fast-paced environment of downtown with some genuine hospitality, so that whether our guests are coming for a quick bite or cup of coffee on the way to work or they’re planning on getting some work done in Understory, we can add a little brightness to their day,” said Boomtown CEO Andrew Loreman. Boomtown joins Flip 'n Patties and Mona Fresh Italian Food as the opened concepts so far at Understory.
