Inverness hotel completes six-figure refurbishment

Revamp of the Waterside Restaurant in Inverness revamp is the next stage of owners' multi-million-pound rolling investment package

The Glen Mhor Hotel acquired the Waterside Hotel last year, following on from previous purchases of neighbouring bed and breakfast establishments, allowing the hotel to increase the number of weddings it hosts each year from 10 to between 50 and 100.

The Waterside Restaurant, which overlooks the River Ness, has been revamped, with local and international chefs recruited to serve Scottish and European dishes alongside traditional family dining.

As part of its revision of its food and drink offering, another of Glen Mhor’s eateries will close to become Nicky Tam’s Whisky and Wine Bar, with a new manager, whisky specialist Scott Sutherland, now on board.

“Hotel food and drink can be boring; we are doing things differently,” Glen Mhor Hotel general manager Emmanuel Moine said.

“With the refurbishment and new focus, our aim is to have a ‘funky’ food and beverage offering. We are looking to up the game.

“When we took over the Waterside Restaurant, it had a name and reputation. We decided to keep that but refurbish. We are going to introduce a winter terrace so people can benefit from the best views in the city all year round, and there’s been significant work inside.

“As well as the Waterside Restaurant, moving Nicky Tam’s back to being more of a bar will be exciting. With our whisky specialist, 130 malts and over 30 wines by the glass, we think it will prove to be a unique attraction in the city.”

The venture is run by Jon and Victoria Erasmus.
