Nottingham's newest breakfast spot won't have a huge menu - but the build-your-own brekkie will have nearly 300 different combinations.

Just like their devise-your-own meatball boxes, the owners of Hockley bar 31K are at it again - this time at the start of the day.

Their new venture - which more than likely will be called Yolk (it's 99 percent certain, they say) - will give customers a choice, starting with eggs, either fried, hard boiled, soft boiled, scrambled, omelette, or poached, with veggie or vegan variations available.

Next, what to have it on - bagel, cornbread, rye bread, white toast, crumpet, muffin or soldiers. Finally top it with either spinach, garlic mushrooms, ham, prosciutto, salmon, avocado or maple bacon.

Yolk will open seven days a week, next door to 31K at the far end of Goose Gate, in a former off licence and convenience shop that has been closed for some time.

There's a lot of work to be done in the next few weeks to turn the empty shell of the former store into a coffee/breakfast bar with bench seating around the three large windows and a large communal table in the centre.

Will Chambers, managing director, said: "It's not a huge menu but it is a huge menu with 294 combinations. It is something we have taken from next door which has worked well. You can order eggs royale or eggs benedict but people aren't being forced down that route.

"We want this place to have its own identity but with subtle nods to next door."

That means they won't be knocking through the adjoining wall, apart from making a serving hatch for breakfasts to be passed through from 31K's kitchen.

Caffeine fiends can pick the house coffee or a speciality roast. Add dairy milk or oat, soya and coconut variations and then choose how to have it - a fast hit espresso, a longer milky latte or a less frothy flat white are amongst the six options.

It's nearly a year since 31K opened its doors, bringing cocktails, meatballs and a vibrant night-time buzz to the quieter end of Goose Gate. The sixth build-your-own meatballs menu will be launching soon.

"It has been an absolute whirlwind 12 months. We had a slow start with no big online social marketing and it grew from people bringing their friends - speakeasy style. We have grown the most lovely clientele  - people who are friends now.

"It's a really diverse crowd, who are looking for something not super expensive and a nice spot to hang out," added Will, who runs the business with Joe Hague, Scott Atchison, Lau Wensink and Cory Chadwick.

Compared to other parts of Hockley, the bar is off the beaten track but it hasn't been a stumbling block.

"We've just embraced it. We have some cracking competition, more central than us. We could moan about this not being in Broad Street or Carlton Street but for groups of friends coming from Sneinton, we're the first bar they come to, and we are buzzing.

"The outdoor seating this summer has been a game changer. Four groups of people sat outside is a good advert.

On August 29, the first anniversary of 31K, there will be an open day to take a look around Yolk, with service likely to start on Monday September 2.

Breakfast will be 7am to noon, then sandwiches and salads from noon to 7pm to begin with but will be reviewed depending on demand.
